Glazed Fruit Flan
Batter I1/3 c butter
2 egg yolks
½ c sugar
1 pkg OETKER Vanilla Sugar
3 Tbsp. hot water
2 egg whites
7/8 c all-purpose flour
1 tsp. OETKER Baking Powder
Filling Ingredients:
1 pkg. OETKER Vanilla Pudding
2 ½ c milk
¼ c sugar
1 pkg OETKER Vanilla Sugar
Decoration Ingredients:
1 ½ lb. Any fresh fruit in season such as strawberries, grapes, blueberries or canned fruit such as apricots, pears, peaches, pineapple, etc.
Glaze Ingredients:
1 pkg OETKER Clear Glaze
1 c water or fruit juice
2 Tbsp. sugar
Batter:
PREHEAT oven to 350 degrees F. Grease and flour a 10 ½” flan pan.
COMBINE butter, egg yolks, 2/3 c. of sugar, vanilla sugar and hot water. Beat at high speed of electric mixer until thick and creamy.
BEAT egg whites and remaining sugar to stiff peaks. Fold into egg yolk mixture.
SIFT flour and baking powder together over egg mixture. Fold in gently. TURN batter into prepared pan. Make sure batter is down in grooves.
BAKE at 350 degrees F for 25-30 min. or until toothpick inserted in center comes out clean.
REMOVE from pan immediately. Place cold wet cloth on back of pan for easy removal of cake. Cool cake completely.
Filling:
USING all filling ingredients, prepare according to package directions. Cool slightly then spread over cake.
Decoration:
ARRANGE fruit attractively over filling.
Glaze:
PREPARE glaze according to package directions. Spoon hot glaze over fruit. Chill to set
